Ingredientes

Preparación

Ingredients

Preparation

  1. Boil the passion fruit with the brown sugar, soy sauce and garlic 4 minutes, until slightly thick.
  2. Pat the salmon dry and rub with the oil, salt and pepper.
  3. With the grate clean and oiled at medium-high, place the salmon skin side down and cover. Cook 6–8 minutes without flipping.
  4. Brush with the glaze for the last 2 minutes. It's done at 145°F, when it flakes.
  5. Slide the spatula between the skin and flesh to serve: the skin stays on the grate.
  6. Grill tip: medium-high heat (400–450°F), skin side down with the lid on: about 8 minutes per inch of thickness without flipping. USDA says 145°F; many cooks pull it at 125–130°F so it stays juicy and it climbs to about 135°F resting. The sugary glaze goes on only at the end so it doesn't burn.
