Ingredientes

Time: 1 h 15 min · Servings: 12
Ingredients
- 3 pounds peeled potatoes
- 3 tablespoons cornstarch
- 1 teaspoon salt
- 2 tablespoons olive oil
- ¼ cup sofrito
- 1 cup cooked lentils
- ¼ cup tomato sauce
- 2 tablespoons raisins
- 1 tablespoon chopped stuffed olives
- ½ teaspoon cumin
- 1 cup breadcrumbs
- Vegetable oil for frying
Preparation
- Boil the potatoes 20 minutes until tender. Mash with the salt and let cool. Mix in 2 tablespoons of the cornstarch.
- For the picadillo, sauté the sofrito in the olive oil. Add the lentils, tomato sauce, raisins, olives and cumin. Cook 8 minutes, mashing the lentils a little, until dry. Let cool.
- With wet hands, shape 12 balls of mash, make a hollow, fill with 1 tablespoon of picadillo and close them.
- Dissolve the other tablespoon of cornstarch in ¼ cup water. Dip each ball in that mixture and then in the breadcrumbs (the cornstarch makes the crumbs stick without egg).
- Fry in oil at 350 °F 3 to 4 minutes until golden. Drain on paper towels and serve hot.
