Preparación

Ingredients

Preparation

  1. Heat the milk to 90°F, remove from heat, add the rennet dissolved in a little cold water and stir 30 seconds. Cover and let rest 45 minutes, until firmly set.
  2. Cut the curd into 1-inch squares and heat it slowly to 105°F, stirring gently. Drain in a cloth-lined colander and keep the curd.
  3. Heat the water with the salt to 175°F. Dip the curd in batches with a wooden spoon until it softens and can be stretched.
  4. Stretch the curd by hand (wear gloves: it's very hot) and fold it over itself several times, like a book, to form the layers or "leaves" (hojas).
  5. Cool the cheese in ice water and refrigerate. It's eaten fresh, sliced, with bread or with guava paste. Hatillo is the center of the island's dairy industry.
