Ingredientes

Preparación

Ingredients

Preparation

  1. Simmer the octopus with the onion, bay leaves and salt over low heat, covered, 50–60 minutes, until a fork slides easily into the thick part of a tentacle.
  2. Drain, let cool a little and separate the tentacles.
  3. For the mojo: warm the oil with the garlic over low heat 1 minute without browning. Remove and add the lime, parsley, paprika and salt.
  4. Brush the tentacles with some mojo and grill over very high heat 3 minutes per side, until marked and crisp at the edges.
  5. Serve drizzled with the rest of the mojo, with tostones or boiled yuca.
  6. Grill tip: the octopus goes on the grill already boiled and tender; there it only browns: high heat (450–500°F), 2–3 minutes per side, until the tentacle tips crisp. Longer makes it tough again.
