Ingredientes

Time: 45 min · Servings: 4
Ingredients
- 2 whole red snappers, 1½ lb each, cleaned and scaled
- ¼ cup olive oil
- 6 garlic cloves, mashed
- ¼ cup lime juice
- 1½ teaspoons salt
- ½ teaspoon pepper
- 1 lime, sliced
- A few cilantro sprigs
Preparation
- Cut 3 diagonal slashes on each side of the fish. Mix the oil, garlic, lime juice, salt and pepper and rub inside and out, working mojo into the cuts.
- Stuff the cavity with the lime slices and cilantro. Let sit 15 minutes.
- Clean the grate very well, heat it to medium-high and oil it with an oiled paper towel (so the skin doesn't stick).
- Grill the fish 7–8 minutes per side without moving it; flip with two spatulas when it releases on its own.
- It's done when the flesh flakes next to the bone and reaches 145°F. Serve with tostones and more mojo.
- Grill tip: figure about 10 minutes per inch of thickness at the thickest part, over medium-high heat (400–450°F). Done at 145°F next to the bone or when the flesh flakes and the eye turns white. A very hot, clean, oiled grate is what keeps it from sticking.
