Ingredientes

Time: 1 h 15 min cooking · 5 h 15 min total (chilling) · Servings: 4
Ingredients
- 1 whole chicken (3-4 lbs), butterflied through the back
- 10 garlic cloves, mashed
- ¾ cup sour orange juice
- ¼ cup olive oil
- 1 tablespoon oregano
- 1 teaspoon cumin
- 1 tablespoon adobo seasoning
- 1 onion, in rings
Preparation
- Make the mojo with the garlic, sour orange, oil, oregano, and cumin. Set aside ¼ cup for serving.
- Rub the chicken with the adobo and the rest of the mojo, inside, outside, and under the skin. Marinate in the fridge from 4 hours to overnight.
- Light the charcoal and wait until the coals are covered in white ash. Place the chicken skin-side up over the indirect-heat side.
- Cover the grill and cook 45-50 minutes, turning halfway, to 165°F in the thigh.
- Finish 5 minutes over direct heat skin-side down so it gets crispy.
- Serve with the reserved mojo and the onion, with tostones or yuca. It's the chicken of the roadside asaderos.
- Grill tip: with two zones, a whole or spatchcocked chicken cooks over indirect heat at 350–375°F in about 45–60 minutes (about 15 minutes per pound if spatchcocked). Look for 165°F in the breast and 175°F in the thigh, not touching bone; crisp it over the coals at the end and rest 10 minutes.
