Ingredientes

Preparación

Ingredients

Preparation

  1. Score the fat in a diamond pattern without cutting the meat. Cut the roast into 1½-inch steaks with the grain and bend them into a C with the fat outside (or skewer them, Brazilian style).
  2. Season with the coarse salt and pepper 30 minutes ahead.
  3. Grill over medium-high direct heat fat side down 3 minutes to render, then 4 to 5 minutes per side, to 130 °F for medium or 145 °F per USDA.
  4. Rest 5 minutes, slice thin against the grain and serve with the mojo (the warm oil with the garlic and lime). Grill tip: dripping fat causes flare-ups; keep a coal-free zone to move the meat to if the fire flares.
