Ingredients

Preparation

  2. Crush the plantain chips in a bag with a rolling pin (into small bits, not powder) and mix with the cilantro.
  3. Season the fish with adobo, dredge in flour, egg and the plantain chips, pressing so the crust sticks.
  4. Bake 12 to 15 minutes, until the crust browns and the fish flakes (145 °F).
  5. Mix the mayonnaise, garlic and lime juice into mayo-ajo and serve on the side. The chips are already salty: don't add more.
