Ingredientes

Time: 50 min · Servings: 4
Ingredients
- 2 boneless chicken breasts, butterflied into 4 thin cutlets
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated parmesan cheese
- 1 teaspoon dried oregano
- Oil for frying
- 1½ cups marinara sauce
- 1½ cups shredded mozzarella
- Basil leaves for garnish
Preparation
- Put the cutlets between two sheets of plastic and pound them with a rolling pin or the bottom of a pot to an even ½ inch (so they cook without drying out). Season with salt and pepper.
- Set up three plates: the flour; the eggs; and the breadcrumbs mixed with half the parmesan and the oregano. Dredge each cutlet through all three, pressing on the coating.
- Heat the oven to 425°F. Fry the cutlets in the oil over medium heat 3 minutes per side, until golden. Drain on paper towels.
- Put them in a baking dish, top each with marinara, the mozzarella and the rest of the parmesan.
- Bake 10–12 minutes, until the cheese bubbles and the chicken reaches 165°F. Garnish with basil and serve with spaghetti or salad.
