Ingredientes

Preparación

Ingredients

Preparation

  1. Prick the duck skin all over with a fork, without reaching the meat. Season it inside and out with the salt, garlic, oregano and sour orange juice and refrigerate overnight.
  2. Heat the oven to 325 °F. Put the orange inside the duck and set it on a rack in a roasting pan, breast side up.
  3. Roast 2 hours 30 minutes, removing the fat from the pan every 45 minutes (save it for frying potatoes).
  4. Mix the rum and molasses, brush the duck and raise the oven to 400 °F. Roast 15 more minutes, until the skin is glossy and crisp.
  5. Let rest 15 minutes before carving. It's for the holidays: serve it with arroz con gandules.
