Ingredientes

Preparación

Ingredients

Preparation

  1. Dry the skin well and prick it all over with a fork or knife tip, without reaching the meat. Rub the meat (not the skin) with the oregano and garlic.
  2. Brush the skin with the vinegar and cover with the coarse salt. Leave it uncovered in the fridge overnight: it dries and crackles like lechón skin.
  3. Brush off excess salt. Roast at 325 °F for 1½ hours, then raise to 450 °F for 20 to 30 minutes, until the skin puffs and crackles (watch it doesn't burn).
  4. Rest 10 minutes, cut into squares with a serrated knife and serve with the mojo (the warm oil with the garlic and lime). It's very rich: a small portion with salad works well.
