Ingredientes

Time: 1 h 20 min · Servings: 6
Ingredients
- 2 cups short-grain rice
- 1½ lb chicken thighs, in pieces
- 1 lb rabbit in pieces (or more chicken)
- ¼ cup olive oil
- ½ lb green beans, cut
- 1 cup cooked lima or white beans
- 1 ripe tomato, grated
- 1 teaspoon sweet paprika
- ½ teaspoon saffron threads
- 6 cups hot water or chicken broth
- 1½ teaspoons salt
- 1 sprig fresh rosemary
Preparation
- Season the chicken and rabbit with salt. In the paella pan, brown them in the oil over medium heat 15 minutes, turning, until well browned (that's where the flavor comes from).
- Add the green beans and sauté 3 minutes. Make a well in the center and sauté the tomato and paprika 2 minutes.
- Pour in the hot water with the saffron and salt and simmer 15 minutes over medium heat to make the broth right in the pan.
- Add the rice spread evenly and the beans. Cook 10 minutes over medium-high and 8–10 over low, without stirring.
- Put the rosemary sprig on top for the last 5 minutes. Form the socarrat 1–2 minutes, remove the rosemary and rest covered 5 minutes.
- The chicken should reach 165°F inside. This is the original paella from Valencia: no seafood.
