Ingredientes
In English: Charcoal-Grilled Chicken Thighs with Annatto Adobo
Time: 45 min cooking · 2 h 45 min total (marinating) · Servings: 6
Ingredients
- 3 lb bone-in, skin-on chicken thighs
- 3 tablespoons annatto oil
- 6 garlic cloves, mashed
- 1 tablespoon oregano
- 1 teaspoon cumin
- 2 teaspoons salt
- ½ teaspoon pepper
- ¼ cup lime juice
Preparation
- Mix the annatto oil with the garlic, oregano, cumin, salt, pepper and lime juice. Rub it all over the chicken and marinate 2 hours in the fridge.
- Set up the charcoal for two zones: coals on one side and the other empty.
- Put the thighs skin side down over the coals 3–4 minutes, until the skin browns (move them if it flares up).
- Move them to the side without coals, cover and cook 25–30 minutes, turning once, until they reach 175°F inside next to the bone.
- Rest 5 minutes. Use a different platter to serve: the one that held the raw chicken isn't used for cooked.
- Grill tip: thighs are more forgiving than breast; they're safe at 165°F but juicier and more tender at 175–185°F. Use medium-high direct heat only to crisp the skin (hand test 5 inches above the grate: 2 seconds = high (450–550°F), 4–5 = medium (350–450°F), 6–8 = low (250–350°F)) and finish over indirect heat with the lid on, about 350–375°F.
