Ingredientes

Preparación

Ingredients

Preparation

  1. Peel the malanga with gloves or oiled hands (the skin itches) and keep it in water so it doesn't darken.
  2. Boil in salted water 20–25 minutes, until very soft. Drain.
  3. Mash while hot with the butter and milk until smooth and creamy: malanga is stickier than potato, that's normal.
  4. For the mojo: warm the oil with the garlic over low heat 1 minute without browning, remove and add the lime, cilantro and salt.
  5. Serve the mash topped with the mojo, with beef stew, salt cod or chicken. On the island, malanga and yautía are the same root vegetable.
