Ingredientes

Preparación

Ingredients

Preparation

  1. Cut the ends off the plantains and slit the skin lengthwise, without going through to the other side.
  2. Put them over the coals at medium heat, in their skins, 20–25 minutes, turning, until the skin is black and the plantain is soft when pressed.
  3. Open them along the slit, add a bit of butter, the salt and, if you like, the cheese to melt.
  4. Eat them with a spoon, straight from the skin. They go with any meat from the grill.
  5. Grill tip: medium heat (350–400°F), 20–30 minutes in the skin, turning every 5–7 minutes. The blacker and riper the plantain, the sweeter it gets. It's done when it gives like butter when squeezed with tongs.
