Ingredientes
In English: Spit-Roasted Whole Pig (Guavate, Cayey)
Time: 8 h cooking · 9 h total (marinating) · Servings: 50
Ingredients
- 1 whole pig (45 pounds), cleaned
- 2 cups mashed garlic
- ½ cup oregano
- ½ cup salt
- 2 tablespoons pepper
- 1 cup sour orange juice
- 1 cup annatto oil
- A metal or hardwood spit, wire and charcoal for roasting
Preparation
- The night before: mix the garlic, oregano, salt, pepper and sour orange juice. Make deep cuts in the meat (not the skin) and rub the adobo inside and out. Refrigerate or keep on ice.
- Run the spit through the pig from tail to head and tie it firmly with wire so it turns with the spit.
- Build an even charcoal fire and set the pig 2 feet above it. Turn slowly and constantly (by hand or with a motor) for 6–8 hours, adding charcoal to keep the heat.
- In the last hour, brush the skin with annatto oil and bring the fire a little closer so the skin puffs and turns crisp.
- It's done when the thickest part of the leg and shoulder reaches 190°F and the meat pulls apart on its own. That's how it's roasted at the lechoneras of Guavate, in Cayey, the famous Pork Route (Ruta del Lechón).
