Ingredientes

Time: 1 h 45 min · Servings: 6
Ingredients
- 2 lb flank steak in one piece, butterflied
- 4 garlic cloves, crushed
- 1 teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons sour orange juice
- 1 carrot, in strips
- 1 red bell pepper, in strips
- 2 hard-boiled eggs, quartered
- 10 stuffed olives
- 2 tablespoons olive oil
- ½ cup sofrito
- 1 can (8 oz) tomato sauce
- 1 cup beef broth
- 1 bay leaf
Preparation
- Pound the flank to an even ½ inch. Season with the garlic, oregano, salt, pepper and sour orange and let sit 30 minutes.
- Lay the carrot, bell pepper, eggs and olives lengthwise on top. Roll it up with the grain (so the slices are cut across the grain and tender) and tie with kitchen twine.
- Brown it on all sides in the oil in a caldero. Add the sofrito, tomato sauce, broth and bay leaf.
- Cover and cook over low heat 1 hour 15 minutes, turning halfway, until tender. Rest 10 minutes, remove the twine and slice into rounds with the sauce.
