Ingredientes

Preparación

Ingredients

Preparation

  1. Mix the sour orange with the garlic, oregano, salt and pepper, and marinate the ribs 4 hours in the fridge.
  2. Set up the charcoal at high heat. Drain the ribs and pat them a bit dry (so they brown instead of steaming).
  3. Grill 3–4 minutes per side, until browned with grill marks.
  4. Rest 5 minutes and serve with chimichurri, arroz con gandules or tostones.
  5. Grill tip: these ribs are thin (¼–½ inch), so they go over high heat (450–550°F) and fast: 3–4 minutes per side. Thick beef short ribs are the opposite: indirect heat at 250–275°F for 5–7 hours, to 200–205°F inside.
