Ingredientes

Preparación

Ingredients

Preparation

  1. Sort the beans (remove pebbles and bad ones), rinse and soak in the soaking water 8 hours or overnight. Discard that water.
  2. In the pressure cooker, cook them with the 6 cups water and the bay leaf 25 minutes at high pressure; let the pressure release naturally. Without a pressure cooker, simmer covered 1½ hours.
  3. In a skillet, sauté the sofrito in the oil 3 minutes and add the tomato sauce.
  4. Add the sofrito to the beans with the calabaza, potato and salt and cook uncovered over medium heat 25 minutes, until the calabaza falls apart and the broth thickens.
  5. Add the culantro and serve over white rice. They're cheaper and less salty than canned; they freeze up to 3 months.
