Ingredients

Preparation

  1. Simmer the pig's feet in the water with the bay leaf, covered, 1 hour 30 minutes to 2 hours, until the meat comes off the bone (45 minutes in a pressure cooker). Save 3 cups of the broth.
  2. Sauté the sofrito in the annatto oil 3 minutes and add the tomato sauce.
  3. Add the pig's feet, the saved broth, the beans, calabaza and salt.
  4. Cook uncovered over medium heat 25 minutes, until the calabaza falls apart and the broth thickens.
  5. Add the culantro and serve with white rice. The collagen from the pig's feet makes the broth thick and glossy.
