Ingredientes

Preparación

Ingredients

Preparation

  1. Cut off the ends of the green bananas and slit the skin lengthwise without cutting into the flesh.
  2. Boil them in their skins in water with 1 tablespoon salt and 1 of oil (this keeps them from staining) for 15-20 minutes, until tender but firm.
  3. Drain, peel while warm, and cut into ½-inch rounds.
  4. Escabeche: heat the olive oil on low and cook the onion, garlic, peppercorns, and bay leaves for 10 minutes without browning.
  5. Add the vinegar, olives, and salt. Let it boil 1 minute.
  6. Place the bananas in a glass container and pour the hot escabeche over them.
  7. Cover and let rest at least 4 hours; overnight is best. Serve at room temperature, as a side or appetizer.
