Ingredientes

Preparación

Ingredients

Preparation

  1. Make the mojo: mix the garlic, sour orange, oil, oregano, cumin, and salt. Set aside ⅓ for serving.
  2. Marinate the chops and onion in the rest of the mojo, in the fridge, from 2 hours to overnight.
  3. Grill the chops over medium-high heat 5-6 minutes per side, to 145°F inside. Grill the onion at the same time.
  4. Rest 3 minutes. Serve with the grilled onion and the reserved mojo (never the one that held the raw meat).
  5. Grill tip: for 1-inch chops, medium-high direct heat (400–450°F) 4–5 minutes per side. Pull them at 140°F: they climb to 145°F, the safe temperature for pork, in 3–5 minutes of rest, and stay juicy and faintly pink. If thicker, finish over indirect heat.
