Ingredientes

Time: 40 min · Servings: 6
Ingredients
- ½ lb taro (yautía), peeled
- ½ lb malanga, peeled
- ½ lb sweet potato, peeled
- Oil for frying
- 1 teaspoon salt
- ½ teaspoon garlic powder
Preparation
- Slice the roots paper-thin on a mandoline (with the hand guard). Keep them in cold water so they don't darken.
- Drain and dry very well with paper towels: wet slices splatter and won't crisp.
- Fry in batches at 350 °F, 2 to 3 minutes, until the bubbling stops and they're golden. Sweet potato browns faster: watch it.
- Drain on paper towels and season while hot with the salt and garlic powder.
