Ingredientes
- 1½ tazas de galleta molida
- ⅓ taza de mantequilla, derretida
- 24 onzas de queso crema, a temperatura ambiente
- ½ taza de azúcar
- ½ taza de crema de coco
- 3 huevos, a temperatura ambiente

Ingredients
- 1½ cups cookie crumbs
- ⅓ cup butter, melted
- 24 oz cream cheese, at room temperature
- ½ cup sugar
- ½ cup cream of coconut
- 3 eggs, at room temperature
- 1 can (8 oz) crushed pineapple, very well drained
- Topping: 1 can (8 oz) crushed pineapple with its juice
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- ¼ cup shredded coconut, toasted
Preparation
- Heat the oven to 325°F. Make the crust with the crumbs and butter and bake 10 minutes. Wrap the pan in foil.
- Beat the cream cheese with the sugar and cream of coconut. Add the eggs one at a time, then the drained pineapple (press it in a strainer: extra juice makes it watery).
- Bake in a water bath 60–65 minutes and leave 1 hour in the turned-off oven with the door cracked. Refrigerate overnight.
- For the topping: boil the pineapple with its juice, the sugar and cornstarch 2 minutes, until thick. Let cool.
- Top the cheesecake with the pineapple and toasted coconut. All the flavor of the drink, without alcohol.
