Ingredientes
- 1½ tazas de galleta molida (María o graham)
- ⅓ taza de mantequilla, derretida
- 24 onzas de queso crema, a temperatura ambiente
- 1 taza de azúcar
- 3 huevos, a temperatura ambiente

Time: 1 h 45 min cooking · 9 h 45 min total (chilling) · Servings: 12
Ingredients
- 1½ cups cookie crumbs (Maria or graham)
- ⅓ cup butter, melted
- 24 oz cream cheese, at room temperature
- 1 cup sugar
- 3 eggs, at room temperature
- ½ cup sour cream
- ⅓ cup passion fruit pulp, strained
- 1 teaspoon vanilla
- Topping: ½ cup passion fruit pulp (with seeds)
- ¼ cup sugar
- 1 tablespoon cornstarch
Preparation
- Heat the oven to 325°F. Mix the crumbs with the butter, press into the bottom of a 9-inch springform pan and bake 10 minutes. Wrap the outside of the pan in heavy foil (for the water bath).
- Beat the cream cheese with the sugar on low speed until smooth, scraping the sides. Add the eggs one at a time, beating only until combined (extra air makes it crack).
- Add the sour cream, passion fruit and vanilla. Pour over the crust.
- Bake in a water bath 55–65 minutes, until the edges are set and the center still jiggles a little (about 150°F). Turn off the oven, crack the door and leave the cheesecake inside 1 hour.
- For the topping: boil the passion fruit with the sugar and cornstarch 2 minutes, stirring, until thick. Let cool.
- Run a knife around the edge, refrigerate overnight and top with the passion fruit sauce before serving. For clean slices, dip the knife in hot water and wipe it between cuts.
