Ingredientes

Time: 20 min · Servings: 4
Ingredients
- 2 pounds cleaned squid (bodies and tentacles)
- 3 tablespoons olive oil
- ½ teaspoon salt
- 4 garlic cloves, finely chopped
- ¼ cup chopped parsley
- 2 tablespoons lime juice
- 1 lime, in wedges
Preparation
- Open the squid bodies lengthwise and score them inside in a crosshatch, without cutting through. Dry them very well.
- Mix the garlic, parsley, lime juice and 2 tablespoons of the oil. Set this dressing aside.
- Heat a griddle or cast-iron skillet over high heat. Rub the squid with the rest of the oil and the salt.
- Cook 1 to 2 minutes per side, in batches, until they curl and brown. Longer makes them rubbery.
- Drizzle with the garlic-parsley dressing and serve right away with the lime wedges.
