Ingredientes

Ingredients
- 5 eggs, separated
- ½ cup sugar for the cake
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 can (13.5 oz) coconut milk
- ¼ cup sugar for the cream
- 3 tablespoons cornstarch
- ½ cup toasted shredded coconut
- 2 tablespoons powdered sugar
Preparation
- For the cream: cook the coconut milk with the sugar and cornstarch, stirring constantly, until thick. Cover with plastic wrap pressed on the surface and let cool.
- Heat the oven to 375 °F and line a 10 × 15-inch pan with greased parchment. Beat the egg whites to stiff peaks with the sugar; add the yolks and vanilla, then fold in the flour sifted with the baking powder.
- Spread in the pan and bake 10 to 12 minutes, until it springs back when touched. Turn it out onto a towel dusted with powdered sugar, peel off the paper and roll it up warm with the towel. Let cool 20 minutes.
- Unroll, spread the coconut cream, sprinkle half the toasted coconut and roll it up again, without the towel.
- Sprinkle with the rest of the coconut and the powdered sugar. Refrigerate 1 hour before slicing. It's another of the Mayagüez brazo gitano flavors.
