Preparación

Ingredients

Preparation

  1. Boil the tails in the water 5 minutes. Remove, chill in ice water, take out the meat and cut it into chunks. Return the shells to the water and boil 15 more minutes to make the broth; strain it.
  2. In a caldero, sauté the sofrito in the annatto oil 3 minutes. Add the tomato sauce, sazón, olives and capers.
  3. Add the broth and salt and bring to a boil. Add the rice and cook over medium heat 18–20 minutes, stirring now and then, until soft and slightly thick.
  4. Add the lobster and peas for the last 3 minutes (cooked longer, it turns tough).
  5. Serve hot topped with the pepper and with tostones. Asopao thickens as it sits: add hot broth if needed.
