Preparación

Ingredients

Preparation

  1. Grease a baking sheet or a marble board.
  2. In a caldero, boil the brown sugar, cane syrup, water and ginger over medium heat, without stirring, until a drop in cold water turns hard and brittle (300 °F on a thermometer), about 12 minutes.
  3. Add the peanuts and salt and stir quickly 1 minute.
  4. Off the heat, add the baking soda (the mixture foams and lightens) and pour it right away onto the sheet, spreading with a greased spoon.
  5. Once hard, break into pieces. It's the peanut candy sold at kiosks and town fiestas. Hot sugar burns: keep children away.
